Seductive reductive minerality and clean elderflower on the nose. With a refreshing, light spritz upon opening, the texture is zesty and the palate is high-toned and super fresh. With a very sessionable ABV, the wine is light, juicy and lifted. Truly as good as UK's still wines get – you'd expect nothing less from Jimmy Smith, Jura junkie and one of the UK's most celebrated wine educators. Along with his partners, Bethany Patterson and winemaker Sam Hill, they're changing the UK wine game one bottle at a time.
The Bacchus is sourced from a high altitude vineyard located in the beautiful Surrey Hills and the Pinot Gris from the West Sussex/Hampshire border. The grapes are hand-harvested and whole cluster pressed separately at BGW. Each variety is vinified separately through a natural fermentation in stainless steel tanks at cool temperatures, with no MLC or lees ageing. Ten percent of the blend is Pinot Gris that has gone through a week's fermentation on its skins which is blended into the wine to add texture, body and roundness. 55% Pinot Gris, 45% Bacchus.
