Nose of salted lemon tart and young pear with a kiss of smoky mineral action. Screams of that famous dry, briny wind that runs northeast through the Canaries. Hint of Umami as well, but the palate is zippy, citrus forward, with the classic punchy volcanic minerality that this region is famous for. High altitude vines give the wine an incredible energy and freshness, making it an ideal oyster or sushi wine. Considerable time on the lees gives some nice texture here, rounding out the weight and giving it a few more possibilities for pairing than just the go-to shellfish and crudo action. Some delicate herbs and white pepper to finish. - Nathan Lithgow
