Aramis Vineyards are situated in the south-western fringes of the McLaren Vale region. Sited on a long, steep, south-facing slope, the vines look across to the rounded shapes of the nearby Willunga Hills. The sandy beaches of Gulf St Vincent lie only a few kilometres to the west, placing vines in easy reach of the maritime breezes supplementing the distinctive Mediterranean climate of McLaren Vale. The vineyard is one of the coolest in the McLaren Vale region.
From Aramis’ organic vineyards in Aldinga, this single-estate Cabernet Sauvignon spent 18 months in French oak. Blueberries and black fruits layered with hints of tomato leaf and cedar spice and tobacco. The palate has a fresh lift, supported by fine grained tannins and gentle oak. Made with minimal intervention, to let the McLaren Vale fruit speak for itself. –Jennifer Bui
