This is proper grown-up Loire Cabernet Franc from one of Bourgueil's great old names. Galichets brings the classic Chevalerie combo: redcurrant, raspberry, graphite, dried herbs, a little tobacco leaf and that unmistakable Cabernet Franc earthiness.
The magic here is bottle age. The fruit is still alive, but the edges have softened and everything has settled into a savoury, silky, very drink-me-with-dinner place. Roast chicken, lentils, mushrooms, pork, sausages, hard cheeses — basically anything rustic and delicious. This is Loire Cab Franc with its boots on and its manners intact.
