Tidal Bay is a unique appellation wine specific to Nova Scotia. In fact, it's the only appellation designation of its kind in North America. With strict requirements as to permitted grapes, and even alcohol level, this is a true expression of Nova Scotia's cool seaside climate. They must demonstrate the distinctive taste profile that reflects the classic Nova Scotian style: lively fresh green fruit, dynamic acidity, and characteristic minerality. At 10% ABV, Lightfoot & Wolfville's Tidal Bay ticks all the boxes. 55% L'Acadie Blanc, 20% Chardonnay, 12% Riesling, 10% Geisenheim, 3% Siegerrebe.
Aromatic rose petal, supreme'd blood orange and spring strawberry leap from the glass. Bramley apple skins, citrus and grilled pineapple are playful with a good balance of residual sugar and acidity. Pair with sticky fruity glazed pork. -Sarah Wright
