Cave Spring, one of Niagara’s original pioneers, started in 1978 when the Pennachetti family boldly planted some of the region’s first vinifera vines on a former orchard beneath the limestone cliffs of the Niagara Escarpment. Driven by a firm belief in the area’s potential, the family helped lay the groundwork for Niagara’s wine movement.
Today, Cave Spring remains family-owned and deeply connected to its origins, while continuing to evolve. They craft precise, site-expressive wines, primarily from their Beamsville Bench estate vineyard, which benefits from the moderating breezes of nearby Lake Ontario and a distinctive microclimate that produces fresh, balanced wines.
Sustainability and low-intervention winemaking are at the core of their ethos. They work with indigenous yeasts, neutral oak, and gentle cellar practices to let the terroir shine. As Ontario’s first certified sustainable winery, they lead the way through initiatives such as fostering biodiversity, harnessing solar energy, and using lightweight glass.
From pioneering high-density plantings to co-founding the VQA, Cave Spring has played a pivotal role in shaping Canadian wine standards. Today, every decision reflects a long-term vision: honouring the past while shaping the future of Niagara.
