Bill Downie only makes Pinot so he doesn't have to talk about grape varieties, he's much more interested in why a wine tastes like a place. Cathedral is an excellent introduction to his wines, fermented in stainless steel, it’s aromatic, with crunchy cherry fruit, fresh acid, fine tannins and a lightly textured finish. It's a real sharp Pinot - dark red berries, hint of spice, fresh acidity, and just the right amount of delicate earthiness. Fruit is 70% from Mornington Peninsula with the rest from King Valley.
