The romance of Il Caberlot started in the 1960s when Remigo Bordini discovered a unique clone growing in Veneto. The clone was a mysterious genetic mutation of Cabernet Franc which had characteristics of Merlot grapes. The grape was cultivated and and planted to a small vineyard in the southern Chianti mountains in 1986. Carnasciale is the second wine of the estate. Ready for drinking earlier and made with young vines, but with all the layers, and care, given to its big brother. Violets, cracked black pepper, wild blackberries and black cherry. The structure lends itself to aging, and so a decade in the bottle yields more complex earthy unmistakably Italian vibes.
